Ingredients for one person
3 Large Eggs
2 Teaspoons of unsalted butter
1/4 small onion finely diced
1/4 jalapeno cut into slices " include seeds"
1 ounce crumble goat cheese
2 Teaspoons finely chopped chives

Melt butter in skillet over medium heat, add onion and jalapeno peppers, cook until tender 5-7 minutes.
Stir in eggs, add salt and pepper to your taste.
Stir until soft fluffy curds form. Remove from heat and mix in the goat cheese and chives.
