Cheesy Scrambled Eggs with onions and jalapeno peppers.


Eggs provide a high quality of protein, vitamin B and choline which is a nutrient that may curb anxiety, also helps to boost memory and maintain communication among brain cells. Chives are full of nutrients like vitamins, minerals, antioxidants and are low in calories. Onions have many benefits. The chromium in onions assist in regulating blood sugar, while the sulfur helps in lowering the blood sugar by triggering increased insulin production. Jalapenos contain capsaicin, a compound that assist in weight loss, pin relief, improved heart health, and lower ulcer risk.


Goat cheese is a healthy alternative from regular cheese.

Goat cheese contains half the saturated fats and cholesterol that other cheese have. The calcium in the cheese is more easily absorbed with the vitamin D from the eggs. The flavor in goat cheeses comes partly from the fatty acids in goats milk that differ from cows milk. Generally, cheese with less moister have a stronger piquant flavor and strong aroma. The more denser the cheese, the more slowly it has dried as it ages, and the more complexities flavor develops.

Ingredients for one person
  • 3 Large Eggs 

  • 2 Teaspoons of unsalted butter

  • 1/4 small onion finely diced

  • 1/4 jalapeno cut into slices " include seeds"

  • 1 ounce crumble goat cheese

  • 2 Teaspoons finely chopped chives

  • Pinch of salt and pepper                              Print or Download this recipe



Melt butter in skillet over medium heat, add onion and jalapeno peppers, cook until tender 5-7 minutes.

Stir in eggs, add salt and pepper to your taste.

Stir until soft fluffy curds form. Remove from heat and mix in the goat cheese and chives.

Serve with your choice of whole grain toast.
